Sam Olayinka Makes Mango Salad

Located in Vancouver’s West End, Arike is a progressive Nigerian fusion restaurant using local or Canadian ingredients and a wide range of ingredients from West African and Nigerian cooking. Making mango salad here is one of the owners Samuel Olayinka, of Nigerian and Dutch descent, who grew up in Ottawa surrounded by Nigerian culture and whose cooking career has been based in B.C. The goal of Arike restaurant is to build a greater acceptance of and shine a light on African food. Arike’s cuisine is also influenced by its multicultural (Asian, European, Caucasian and South African) team. The only time-consuming part of making this delicious mango salad is boiling the limes eight times for the dressing.
